- 1 small container plain non-fat Greek yogurt
- Honey
- 12 strawberries, washed and roughly chopped or any fresh fruit of your choice
My son woke up this morning under the weather. He had a slight fever yesterday, but after taking him to Immediate Med today, they diagnosed him with strep throat. Yucky. I feel bad for any kid that gets sick. But after some anitibiotics and my homemade chicken soup, he will be feeling better by tomorrow.
Several reputable studies have been done on the old fashioned notion that you give a sick person chicken soup.
It seems there is some truth to it. Chicken has some natural anti-inflammatory remedies, relieving the symptoms of stuffy noses and some body aches. This is not a cure, but it sure helps you feel better while the real medicine takes effect.
They also found that the vegetables cooked with the soup also had cold symptom benefits, that is, separate from the chicken. Both together were of course, superior.
What perfect timing, because Kroger has on sale:

Put a few large spoonfuls of yogurt into 4 small glasses or ice cream bowls. Drizzle each with about 1 Tbs. honey. Add strawberries on top.
Variations:
- Add toasted chopped nuts
- Layer ingredients like a parfait for a pretty presentation
- Use any fresh fruit (FREE Blueberries for those that took advantage of them at Publix this week)

One of my favorite things to make with mayonnaise is Aioli. It is an easy Mayo based sauce that is excellent with lots of dishes, especially fish, salmon, fried calamari, french fries or anywhere you would use mayonnaise.
This recipe is for a traditional Aioli:
You can add your own touch by adding ingredients that enhance the Aioli for a whole new taste.
Add Dijon Mustard for a tangy sauce.
Add Pureed Roasted Red Pepper for a mild pepper sauce, awesome with meats and fried foods.
Add Pureed mushrooms for an earthy sauce (one of my favorites)
Add Rosemary for a fresh tasting sauce.
Try roasting your favorite vegetables, puree them and make a Roasted Vegetable Aioli.
Roast vidalia onions and puree them and add them for the best dip you have ever had.
Add lemon for a citrus aioli, perfect for dipping seafood.
The list is endless.
It's affordable enough to experiment with, and MMMMMMM delicious!!

We just got back from the pool, and worked up quite an appetite. Our son had his black belt testing this morning and got recommended to go to Black Belt training, YYYAAAAYYYYY!!! He has worked so hard today, and played just as hard.
It's now a rainy Saturday afternoon, and thoughts are turning toward dinner.
I have some ground pork in the freezer that I let defrost overnight. I got a great deal on it at Kroger. They are having a sale on ground pork @ $1.60 lb. Great price, so I grabbed a couple of 1 lb packages.
An easy and delicious meal that everyone loves is Dirty Rice. Dirty Rice got it's origins in Louisiana when you mix chicken gizzards and livers in with white rice. It gives it a dirty, brown look, hence the name.
But the Low Country has their own version of Dirty Rice, that they are very proud of, made with pork.
For your own version of Dirty Rice, add or subtract ingredients that you prefer.
We add mushrooms, green peppers, and sometimes peas. You can never go wrong with this dish.

AAAAAHHHHHHHH!! While writing this I scared myself half to death!
I keep having flashbacks to those days in my grade school cafeteria, and that very frightening lunch lady!
Flabby arms, bad breath and how she screached when she said, "Want a Sloppy Joe?"
But, those Sloppy Joe's were OOOHHHH SSSSOOO GOOD!!

Brown the meat, drain any grease, add a can of Manwich Sloppy Joe Mix and serve on your favorite bun or bread.

I lived in Miami, FL for quite a few years. I totally took in all the Latin culture, the language and especially the food!!
I love lemonade, but in the latin culture, lime-aid, or limonada is an absolute hot weather necessity.
With the weather almost at the temperature of the sun, why not try this very refreshing concoction.
Publix - Persian Limes, 20¢
HEB - Limes 25¢
Winn Dixie - Limes, 10¢
2 limes, quartered and any seeds removed
8 cups of cold water
Approximately ½ cup of sugar, more or less based on your preference
Ice cubes as desired

4 center-cut pork chops, 1-inch thick
Salt and freshly ground black pepper
Ground cayenne pepper
2 tablespoons butter
1/4 cup all-purpose flour, spread on a plate
2 medium green bell peppers, stemmed, cored, and membranes removed, cut into strips
2 yellow onions, trimmed, cut lengthwise
3 cloves garlic, minced
2 cups chicken broth
2 to 3 dashes Worcestershire sauce
Trim the excess fat from the chops and season well with salt, pepper, and cayenne. Melt the butter in a skillet over medium heat. Lightly roll the chops in flour, shake off the excess, and slip them into the pan. Brown well, about 3 minutes per side, and remove them to a plate.
Add the bell peppers and onions, to the skillet, and saute until softened, about 3 minutes. Stir in the garlic and cook until fragrant, about half a minute longer. Push the vegetables to the side of the skillet. Add chops to pan and place vegetables on top of pork chops. Pour in the broth and sprinkle with Worcestershire sauce. Cover pan with foil and allow to simmer for 45 minutes or until chops are tender.
Absolutely DELICIOUS!!!

Kroger is having a great sale on Vidalia onions.
$1 lb, I picked up a 5 lb yesterday and I am making with dinner tonite:
Baked Sweet Onions
4 large sweet Vidalia onions
Salt and pepper to taste
4 teaspoons butter
Balsamic Vinegar (optional)
Preheat oven to 250 degrees F. Place onions into a baking dish with approximately 1 inch of water. Bake, uncovered, 2 hours or until onions are soft when you squeeze them.
Remove from oven and place onto a cutting board; pull back brown skins and cut them off at the roots. Transfer onto a serving platter and season each with salt, pepper and 1 teaspoon butter.
For an extra-special taste sensation, drizzle the tops (for use a dropper) of each baked onion serving with balsamic vinegar. So good!
We are so fortunate to live in the south, where these little beauties are grown.
Sweet, delicious and completely satisfying!

A very unique dish that will satisfy even the most sophisticated palate.
I am originally from New England and we cooked with apples quite a bit, especially in the fall.
At Kroger:
Split Chicken Breasts, .99 lb
At Publix:
Musselmann’s Apple Sauce, 6 pk. 4 oz., at $2.33 ($1.16)
-.75/1 Musselmann’s Apple Sauce “Smart Summer Savings” Booklet (store coupon) (makes it 41¢)
Sprinkle with pepper and place in prepared baking pan in one layer. Pour applesauce over chicken. Bake uncovered at 350 degrees for 1 hour. Serve over pasta, rice, or potatoes.
Garnish with raisins or cranberries for a more festive touch.
MMMMMMMMM, Yummy and at these prices, oh so affordable!!
