We just got back from the pool, and worked up quite an appetite. Our son had his black belt testing this morning and got recommended to go to Black Belt training, YYYAAAAYYYYY!!! He has worked so hard today, and played just as hard.
It's now a rainy Saturday afternoon, and thoughts are turning toward dinner.
I have some ground pork in the freezer that I let defrost overnight. I got a great deal on it at Kroger. They are having a sale on ground pork @ $1.60 lb. Great price, so I grabbed a couple of 1 lb packages.
An easy and delicious meal that everyone loves is Dirty Rice. Dirty Rice got it's origins in Louisiana when you mix chicken gizzards and livers in with white rice. It gives it a dirty, brown look, hence the name.
But the Low Country has their own version of Dirty Rice, that they are very proud of, made with pork.
- 1/2 to 1 pound ground pork
- 1/4 cup minced onion
- 1 3/4 cup chicken broth
- 1/2 cup long-grain rice
- 1 tablespoon fresh minced parsley or 1 teaspoon dried parsley flakes
- salt and pepper
For your own version of Dirty Rice, add or subtract ingredients that you prefer.
We add mushrooms, green peppers, and sometimes peas. You can never go wrong with this dish.
